Brunch and Snowshoes

Lately I've been trying to pick out meals based off of things we have in our pantry. In the summer we base our meals off of vegetables from the garden or farmers market. We have a lot of cranberries in our freezer that I want to use up. I found a recipe for cranberry scones that I thought we could have for breakfast.

I was all, "You're baking for breakfast. That's going to take forever."

I've always baked my scones in circle form. I think scone pans are silly. 

Since we were going to go on an adventure today I threw together our leftover chilaquiles. 

While Scott was out shoveling and chatting with the neighbors, I got Meadow dressed for our outdoor fun. And why yes that would be a 3-6 month snowsuit she's wearing.

She's 16 and 1/2 months by the way.

We were going to go to one of the regional parks in the area. The only ones that had trails open were 40 minutes away. It was a bit cold outside so I didn't want to drive far out if Meadow hated it. We settled on Crosby Farm in St Paul instead.

I don't really like snowshoeing on trails. The whole point of snowshoes is make your own path through the woods.

Brooke got these classic snowshoes from Grandma Lungwitz. Since they were bigger than mine and Brooke was carrying Meadow we all upgraded today.

A group of people walking by asked if our little one had snowshoes and I said she does actually. She just has to wait for Christmas and get used to wearing her snow gear first.

It's not too often that we go snowshoeing when the Mississippi hasn't iced over yet.

The snow was only six inches deep. Even cutting through the woods was easy.

Wood ones are definitely heavier, but the seemed to displace the snow very well..

Meadow stayed warm behind me. We ended up taking her glasses off because they were steaming up.

Everyone else was just hiking in their boots along the trails.



I know I'm biased because she's my daughter, but I think she's beautiful.

For dinner we made some hearty soup.

Cheddar cheese and broccoli. I felt like I was eating queso dip with a spoon.

After dinner we built towers with Meadow.

She likes any excuse to get on top of that table. Can't wait until she listens better. For now, I guess I'll enjoy her silliness.

3-6 month snow suit?? What!?

I think the pictures of Meadow in the snowsuit are just gorgeous...I love the white on her.

Did she do good while snowshoeing? I like the huge blocks she has. I love the stuff you guys do...I want to be a part of that and do creative things! :) If you respond to me, is there a way you can tell me so I get it?!

The old Coronavirus got us this week. Despite being sick things still needed to get done.  Still botheringhis sick dad. As you can see, Theo likes to be a pill from time to time. Meadow is always finding ways to lure Pecan into her room.  The weather this week looked like winter so we needed to get our ice rink built.  This year we decided to expand it over the sidewalk.  It was a wee bit small for us adults last year. Theo helped at times.  First we just had to figure out what we could build with the lumber we had. We had enough for the base wall at least. Even Meadow joined us outside for a bit.  I'd like to move this raised bed back a couple of feet next year to simplify the geometry. Brooke lent a hand when I needed the help. We use a DIY Iron Sleek setup. 2 x 12s and these metal brackets are all you need if your slope isn't too extreme. I had to fill in some low spots with dirt on the part that went over the middle garden. I had to wait a day or so to...

Gift Cards are for Spending

Thanks to daylight savings I got up extra early today. For breakfast I had eggs. You thought it was going to be oatmeal didn't you?   Scott was working his early shift at work so I worked on chores. I hate when he works when I have off, but in a way I get more done with him gone. Like dishes.  Our last two pumpkins from our garden.    Before they could start going bad I roasted them in the oven.   I then soaked the seeds in salty water for roasting later.    This week I decided to clean out our buffet drawers. Each drawer was turning into a junk drawer and needed to be cleaned.    I first took everything out to go through what I needed and what could be thrown away/recycled.  I pureed the pumpkin to be used for future use. Like pumpkin woopie pies, mmm.  While cleaning out the drawers I stumbled upon some items left behind from the previous owners.  Now ...

G.G. and Grandpa Make Their 1st Visit to Interstate State Park and Taylors Falls (and Much, Much More)

Oh, hey, Brooke's parents visited us for the first time in forever. I told them if they wanted to keep Meadow, they'd have to bring her back. They arrived on Monday evening with plans to stay all week. I had to work still and we left them in charge of the kids. After a long day at the zoo we convinced them to walk with us to Bread and Pickle.  They were not excited by this, but we knew they could do it. Nothing like an old-fashioned burger and beer meal from Bread & Pickle on a nice summer day.
