Tacos and Hayden on Easter Sunday

Baby Bo-Dot has been moving like crazy and lets us feel its head and feet.

This is getting real folks.

While Scott was still in bed I made breakfast for myself. Since I assumed he wouldn't have time to eat and he doesn't like oatmeal, I didn't share.

Thanks honey. You're so considerate.

I starting prepping the bread before we headed to church. Scott almost didn't go because he was "too tired" to make it to the 11am service.

I didn't sleep well, lady.

As soon as we got back I shaped the bread.

We were having fried chicken sandwiches in a few days, so half of the dough was made into rolls.

Then Scott got to look for his Easter basket. This year is his last one since from now on it will just be for the kid(s).

I'll miss being a kid.

In the process of looking he takes down our Christmas wreath.

I was making sure the Easter basket wasn't hidden in the fake foliage.

He looked everywhere. 

I guess the pictures weren't good enough of him finding it, but he got a new kitchen timer and some candy.

Shaky over here must've had to much imaginary coffee.

Two of my pepper plants never sprouted. Even with the help of the seed warmer and greenhouse. I replanted them in hopes that they will sprout soon or we will have to buy pepper plants. 

My little seedlings are getting so big. I'm so glad I started them early.

Too bad we're having the longest winter ever. So much for getting ready early.

Then I finished prepping and baking the bread while we had leftovers for lunch.

This weeks bread was New York Deli Style Rye. Another sourdough as will all of the upcoming breads. I made a few rolls for our meal tomorrow night.

I had a headache and didn't want it to ruin my night later so I took a nap. Scott joined me since he had to "get up early" today.

I took naps in college all the time. With my self-employment perhaps I'm getting back in that habit.


Then Scott started prepping our Easter dinner.

Fish Tacos. Why not?

I was pretty proud of my multitasking, which included prepping salted cabbage, mashing guac and frying up the tortilla chips and batter cod.

Best Easter dinner if I do say so. Although, it was sad we didn't get to do Freaster this year.

Emma and Tyler were away. We're not sure if we will have a Freaster again. We'll see...

I was still full after dinner, but not Scott he had some of our homemade banana and chocolate cake ice cream.

I didn't want to get hungry when we went out. Plus, I really like ice cream.

For my birthday Scott had gotten me tickets to my favorite artist, Hayden. He only comes around once every 4 years, if that, so I was happy to get to see him again.

It was  a great show. Not a huge crowd with it being Easter, but he was great as always. It was perfect besides a few coked-out weirdos.

  It's Mayday, the greatest day of the year in Minneapolis. I warned Theo that it was going to be hot today but he still insisted on wearing his high wool socks.  Can you blame him. They look so cool. We biked over like we always do. So much easier these days living just across the highway from the South Side.   We left later than planned and didn't have our bikes ready so by the time we arrived there were no more spots on the curb to sit. We hung out in the shade until we heard the Battletrain coming.       It'll be here soon. Or will it? Every 30 feet this giant cardboard castle did a little show. That would explain the long hold up for the parade to start.

Backcountry Camping with Kids in Theodore Roosevelt National Park

Day 1  Back in May I stumbled upon Theodore Roosevelt National Park. I had no idea there was a National Park in North Dakota and that it was the northern end of the Badlands. Usually our summer vacations coincide with Scott's work trips. Since he didn't have any this summer I thought we should take advantage of actually taking a vacation. What, my workcations are always classics? I suppose a second real vacation this year wouldn't hurt. We definitely have more time than normal. As long as we took Covid-19  precautions and avoided people. We finally settled on a time to go. Blake joined us so we borrowed our dad's van so we could ride together. Scott had just driven from Michigan the day before. Blake had met my parents in Wisconsin to get the van and then drove from Duluth to pick us up. Work Trip to Dallas

Another work trip for Scott means another Chinese buffet.  I had to try the best Chinese buffet in Dallas. It just feels like something you do in Texas. I was down in Dallas for a shoot at Parker University. Yeah, I'd also never heard of it. After the shoot and the buffet, I explored the Oak Cliff section of Dallas from L.O. Daniel to the Bishop Arts District. When I go to a sunbelt town I typically look up "most walkable neighborhood" on Reddit. Almost always your best bet in these sprawling metroplexes. Yup, definitely in Texas. I wasn't hungry at this point, but next time I'm in Dallas, I've got to eat at Taqueria El Si Hay. This place just screams, "Really good tacos, here!"
