Dear Diary,




Peanut is a pipsqueek. Really. It's his legal name.





Scott had a meeting at work early this morning and came home right as I got up.





He worked on our grocery list while I started breakfast.







The plan was to have waffles with pureed raspberries but I got a little too excited and added the melted butter too soon without tempering it first. The result: chunky batter because of semi-cooked egg yolks.





Scott had donuts at work so he didn't really care. I was too frustrated (and lazy) to make oatmeal so I had rice krispies or should I say Crispy Brown Rice. I don't normally eat cereal but we had some in the cupboard for the recipe we made the night before.


Brooke decided that she needed to wash her bangs after breakfast. This is what happened.


Peanut gets whiney and Scott notices his bowl is empty. (Thus why his last name is Pipsqueek)




Brooke gets ready for the grocery store. We only buy in bulk; so, we always bring our own mason jars.



 
Brooke's really excited to see the possible wedding venue in Loring Park. She ends up trudging off in front of me.

           



 It's a nice room, but not nearly as cool as the Wirth Chalet.  



As we were checking out we noticed the jar we used to fill with popcorn seeds was broke. Our cashier wanted to take it for us but Scott insisted it was fine. She didn't like that response and told two other coworkers the situation. We eventually gave in and let her take it.



I unpacked groceries while Scott heated up lunch.





Hot and Crunchy Chicken Cones with roasted brussel sprouts.




Our house is beyond overdue for a good cleaning. I normally would let it go since its the last thing I want to do but we have company coming next weekend.






Brooke really liked the frosting. I also love eating batter as I make desserts. 
 



My 26th birthday is tomorrow so Scott works on my cake. Peanut butter cups are my favorite candy so a cake that is similar sounded beyond delicious to me.

I agreed. 



Emma's birthday is 3 days after mine so I wrap her present. What it is I won't tell.





We need bean sprouts for one of our meals. Since they take 3-5 days I start them right away.





Scott quickly cleans the kitchen while I make dinner.
 Brooke was a busy gal all day. She doesn't think I can get things done without a little reminder. 




I find some weird writing behind the fridge. We think it's the width of the fridge.  But did they have to write on the wall?


Mock Duck Banh mi. Scott uses candles as his source for lighting.




This beer tasted like a fireplace. It took a while to get used to. 
 



After our delicious bahn mi dinner Brooke moves right on to the dishes. She loves dishes. 


We Scott continues our his productive day by finally tearing down the wall paper in the upstairs bathroom.



Well Scott does that while I write a letter to my pen pal Jordan in Seattle.



It's getting late but that doesn't stop Scott, he goes through and reorganizes the closet.



I'd rather study up on my Swedish before going to bed.

Yah, I need to step up on my Russian. The grammar is overwhelming though.
The picture of Brooke unloading the groceries is horrible, its worth less than dirt. It looks like some high schooler took it with their cell phone.
I hate candle light, I need a faster lens.

Day 1  Scott had gotten a lucky gig to check out some off the beaten path campsites for Hipcamp. Our trip was going to bring us to the Appalachians. Post Vaxx Memorial Day Weekend Fun in Three Lakes

  We went up to the cottage for one our never-miss weekends, Memorial Day. We got to the cottage at night and in the morning I made some crazy bacon-pancakes for the family and Brooke's parents. This weekend was my annual deep clean of our car. The amount of crumbs and food under the kids seats was pretty disgusting.   

Backcountry Camping with Kids in Theodore Roosevelt National Park

Day 1  Back in May I stumbled upon Theodore Roosevelt National Park. I had no idea there was a National Park in North Dakota and that it was the northern end of the Badlands. Usually our summer vacations coincide with Scott's work trips. Since he didn't have any this summer I thought we should take advantage of actually taking a vacation. What, my workcations are always classics? I suppose a second real vacation this year wouldn't hurt. We definitely have more time than normal. As long as we took Covid-19  precautions and avoided people. We finally settled on a time to go. Blake joined us so we borrowed our dad's van so we could ride together. Scott had just driven from Michigan the day before. Blake had met my parents in Wisconsin to get the van and then drove from Duluth to pick us up.
